Ingredients:
Yellow Squash
5 cloves of Garlic
Salt
Thyme
Green Onions
Mexican Cumin
Butter
Cooking Instructions:
Buy 2 boxes of yellow squash and a bunch of green onions at the Covington Farmers Market. Wash and finely chop the squash. Finely chop the garlic and about half of the onions. Cook the garlic and onions in a generous amount of butter until tender. Add the squash and spices. I use a generous pinch of Mexican cumin. If you do not have Mexican cumin use a little cumin and sage. Go light on the spices because it is easy to over power the squash. Simmer until the squash is done. Add salt to taste.
