Cooking Instructions:
Almost cover the mayhaws with water. Simmer the mahaws until they are tender enough to be mashed - about 15 minutes. Do not overcook - excess boiling will destroy the pectin, flavor and color. Strain through a double layer of dampened cheesecloth or a damp jelly bag. Add 1 cup of sugar for each cup of juice. Cook until jelly sheets from a metal spoon. Remove from heat and skim off foam quickly. Seal in sterile jars.
