Ingredients:
3 OZ BUTTER
2 LEMONS (1 SQUEEZED, 1 THINLY SLICED INTO 12 SLICES)
12 VEAL SCALOPPINE MEDALIONS
FLOUR FOR DREDGING VEAL
1 TBS CHOPPED PARSLEY
1/3CUP WHITE WINE
Cooking Instructions:
IN A SHALLOW PAN, MELT HALF THE BUTTER. DUST THE VEAL WITH FLOUR AND SAUTE BRISKLY, 30 SECONDS ON EACH SIDE. REMOVE FROM THE PAN, PLACE IN SERVING PLATTER AND SET ASIDE IN A WARM PLACE. USING A CLEAN SKILLET MELT THE REMAINING BUTTER. WHEN HOT, ADD THE WINE, LET REDUCE QUICKLY THEN ADD THE JUICE OF ONE LEMON, SALT AND PEPPER TO TASTE AND PARSLEY. WHILE VERY HOT AND FOAMING, POUR THE SAUCE OVER THE VEAL. PLACE SLICE OF LEMON WITH A PINCH OF PARSLEY ON EACH SCALOPPINA AND SERVE. THIS DISH GOES WONDERFULLY WITH A SIDE OF ANGEL HAIR SPAGHETTI COOKED AND SERVED WITH GRATED ROMANO CHEESE AND A DRIZZLE OF EXTRA VIRGIN OLIVE OIL. FAVALOSA!!
