1 medium pumpkin, cubed in 1" pieces
6 cups White wine vinegar
2 cups Sugar
3 cups Water
3 Tbs Salt
1 Cinnamon Stick
4 Juniper Berry
1 Tbs Allspice
6 Large Bay leaves
1 Tbs Peppercorns
3 Tbs Mustard Seeds
8 Cloves of garlic - sliced
1 Shallot - sliced
Cooking Instructions:
Combine all ingredients, except for the pumpkin in a stainless steel pot.

Bring to a Boil. Boil for 10 minutes.

Add the Pumpkin. Let boil until semi soft (about 12 minutes).

Remove Pumpkin and cool on sheet pan.

Cool pickling liquid.

Add pumpkin to cool liquid. Store in glass jar in refrigerator
